Haitian Bouillon Recipe
This is one of my favorite dishes that mother would make every Saturday. What do you need in order to make a the Best Haitian Bouillon.
You need to have well seasoned and baked golden brown cut turkey necks, turkey backs, chicken feet, blue crab claws, fresh cut legumes, mustard green, spinach, cabbage, and cut carrots.

1/2 cup green beans
1 small onions
scallions
carrots
white malanga
medium potatoes
cup flour
beef broth
some cilantro
some parsley
some thyme
1 hot pepper
salt and pepper
Put all the vegetables in a large pot, add beef broth, cook well, add meat, make dumplings. Crush the malanga in the soup to make it thicker.
Year 2013 as Year of the Environment and Agriculture
In 2013, President Michel Martelly proposed at the Independence Day celebrations that 2013 is to be dedicated as the year of environment and agriculture. The Haitian president made the promise that he wants Haiti to depend on itself for at least 70 percent of the food consumed in the country. He insisted that the environment will be one of his top priorities for the remaining years in office.
Among his priorities related to the environment, President Michel Martelly wants to reduce the environmental vulnerability of Haiti to natural disasters as well as boost agricultural production to reduce dependence on food from outside the country
The president wants each and every Haitian Haitian to plant at least one tree as civic contribution to a better resistance to natural disasters.
To commemorate the 209th anniversary of Haiti's independence in his official speech in Gonaives, the Haitian President said that the founding fathers signed the national independence, he is calling on Haitians to come together to rehabilitate the country's environment.
Macaroni au Gratin, Haitian Style
Ingredients: 1.5 (16 oz) macaroni packages, 1 whole onion, diced, chicken broth cubes, cheese block, cut into small cubes, 1 carnation milk, 1/2 cup of butter and 1 cup of parmesan cheese.
Have a large pot of water to boil over high heat. Add the macaroni. Add the onions and Maggi chicken broth as the macaroni gets soft yet firm. Then, you need to reduce heat and keep stirring occasionally. Add the cheese, until melted. It is extremely important to keep stirring constantly to avoid the cheese from sticking to the bottom. After a while, add butter and cheese. Then, pour in the carnation milk and stir. Remove from heat and pour into a greased baking sheet. With oven at about 300 degrees, place in oven and bake for an hour.
Haitian Kremas
Who can say he/she does not like Haitian Kremas. Whether your young or old, this is one alcoholic drink that is acceptable for everyone in the Haitian culture. It is made usually on special occasion such as Christmas, wedding. it's mostly sugar and a dash of alcohol.
Here is an easy way to make Haitian Kremas: Ingredients meat of 2 coconuts, milk, cans of condensed milk, cans of evaporated milk, sugar, vanilla, Zest of a lime. Also don't forget real Haitian liquor or 153 proof if you cant find it
Haitian Pikliz

What do you need in order to make a jar of Pikliz: You need on hand Cabbage, carrots, chiles and other vegetables soaked in vinegar. Add Cabbage, shredded, Carrots, peeled and chopped into small pieces or grated, Onion, Scotch bonnet peppers, Garlic cloves, Salt, Peppercorns and White or cane vinegar.
This crunchy salad is served as a side dish in Haitian meals.
Spicy Haitian Marinades

How to makr Haitian Marinades. Stir water into flour to make batter. Mix in chilies, parsley, and baking powder. then, add chicken and salt. Spoon dollops of batter into hot oil, turning them until brown.
To prepare Vegetarian Marinade using a blender. Blend water, shallot, onion, garlic, scallion, parsley, and Adobo. In mixing bowl add rest of ingredients plus blended ingredients to make batter.
Tassot de Cabrit or Fried Goat, Haitian Style
The secret to making Tassot de Cabrit or Fried Goat, Haitian Style. This is what you do: Since goat meat is usually hard to cook, cut no bigger than 2-3 inches in thickness. Wash your goat meat in vinegar and use cold water to rinse.
Then take your time to marinate in orange and lime juices, pepper and salt for several hours. Then put the marinated meat in a pot without putting in additional water. The water will be added later.
You will add water periodically, a cup at a time to give time for the seasoning to penetrate the meat. When meat is cooked, removed from the liquid. Heat oil in a large frying pan and, without overcrowding the pan, fry the cooked pieces of meat. Serve while still hot.
Making Conch or Lambi, Haitian Style
What you should do in order to make a good Conch or Lambi, Haitian Style
First, since Conch is a tough meat, tenderize it with a mallet. Cut into 1 1/2 inch pieces. Drain conch pieces after soaked in vinegar and water for 2 hours. Use some oil to sauté onion and garlic until onion is tender. Add ingredients and conch into the pot with seasons. Cook over medium heat for 45 minutes, stirring occasionally, until conch is tender.
Pain Patate made the Haitian way
Have you ever tasted a Haitian Pain Patate? If you have not, you are missing a lot. Here is how you can make a Haitian Pain patate by yourself:
You need tp preheat your oven to 375 degrees. Grate the sweet potatoes and mash the banana into the grated sweet potatoes.
Then, mix in all the remaining ingredients except for 1 tbsp. of the brown sugar. Continue until all are completely mixed into the batter. Line or grease a 9 by 13 inch baking pan then evenly spread mixture in. Top evenly with the reserved brown sugar. Bake for about an hour and a half.
Diri Ak Jon Jon or Rice Mushrooms - Diri Ak Djondjon
The best way to make Diri Ak Jon Jon or Rice Mushrooms - Diri Ak Djondjon, Haitian Style: You need to first, slice mushroom caps and place in cold water for 15 minutes to a half hour
Then, you heat oil or butter in a pot and sauté onions, thyme and garlic until tender. Add water from the mushrooms and bring to a boil. At this moment, you add rice, then season with salt and pepper to taste. Allow the rice cook for about 20 minutes or until it becomes flaky.
